      • Purpose: These data provide information pertinent to the safety of food products prepared by retail food establishments in Utah.
      • Use: These data can provide an understanding of failures in protective systems that cause foodborne infections. These data can also be used to monitor trends over time and identify communities at a higher risk of infection.
      • DataSources: The Utah EPHT Network receives restaurant safety data from the from the Environmental Sanitation Program in the Bureau of Epidemiology at the Utah Department of Health. Salmonella, Campylobacter and Shiga Toxin-producing E. coli data comes from the Disease Respone, Evaluation, Assessment and Monitoring Program in the Bureau of Epidemiology at the Utah Department of Health; Population Estimates: National Center for Health Statistics (NCHS) through a collaborative agreement with the U.S. Census Bureau, IBIS Version 2016; and the U.S. Department of Health and Human Services, Centers for Disease Control and Prevention (CDC)
      • DataLimitations: Not all cases of infection may be reported or detected, therefore the number of actual cases may be underreported.
      • Standards: Data from laboratories are converted into a standardized format. The data are validated through a standardized process.

        • supplinf: Escherichia coli O157:H7 has been nationally notifiable since 1994. Per the Communicable Disease Rule R386-702-3, health care providers and laboratories are required to report salmonellosis and campylobacter cases to the Bureau of Epidemiology or a local health department.
